Ingredients
2/3 cups pearled barley
2 cups shelled edamame
1 cup shredded carrot
3 cups shredded cabbage
1/2 cup chopped green onion
Low-fat Asian dressing to taste
Salt and pepper to taste
Directions
Prepare barley and edamame according to package instructions. In medium bowl, toss all ingredients until dressing is evenly distributed. Serve warm or cold.
